Cup of Soup and Spinach Salad

This lunch is not only healthy, but very filling! The soup is also open to a ton of variety, so it is an easy lunch to repeat often.

Ingredients:

For the Soup:

  • 1 cup of low sodium, broth-based, gluten and dairy free soup

 

For the Salad:

  • 2-3 cups Spinach
  • 1/4 medium sliced avocado
  • 1 cup sprouts
  • ½ cup chopped beefsteak tomato

 

For the Dressing:

  • 1 tablespoon mustard
  • 2 tablespoon white vinegar
  • Dash of black pepper

 

Instructions:

For the Soup:

  • Just heat 1 cup of a low-sodium broth-based soup!
  • The recommended soup is gluten and dairy free, so miso, chicken, or vegetable soups are all great options! (As long as they are noodle free!)

 

For the Salad:

  • Mix the spinach, sprouts, tomato, and avocado.
  • Combine the mustard and white vinegar to make the dressing and toss.
  • Sprinkle some black pepper for taste and voila!
