Lemon Herb Tilapia with Green Vegetable Medley

Now this is one entrée I LOVE – a healthy staple that is also flavorful and tasty!


For the Tilapia:

  • 4-6 oz tilapia
  • 2-3 lemon slices
  • 2 teaspoons of garlic salt
  • Dash of thyme
  • Dash of rosemary

For the veggies:

  • Water to boil in
  • 3 asparagus spears (or more)
  • 4 pieces of broccoli (or more)
  • 5 green beans (or more)
  • Yellow mustard or salsa if desired


For the fish:

  • Wash the tilapia and dry.
  • Rub the fish with 2 teaspoons of garlic salt, as well as a dash of thyme and rosemary.
  • Then squeeze 2-3 slices of lemon on it.
  • Preheat oven to 375 degrees F. Spray a medium oven-safe pan with nonstick spray.
  • Transfer fish to the pan.
  • Cook for 10 to 15 minutes, until fish is cooked through.

For the veggies:

  • Steam in water covered on the stove.
  • For flavor, try dipping them in yellow mustard or salsa before steaming!
