Skinny Cupcake Recipe | Happy Easter!

This Easter you don’t have to choose between skimping on dessert and sabotaging your diet.  I have a skinny cupcake recipe that you’ll LOVE!  With some simple ingredient swaps, you can enjoy the yummiest holiday treats for less fat and fewer calories.

I’m sure you’re thinking right now that those scrumptious-looking cupcakes can’t possibly be ‘light’!

Indeed, they don’t look low-calorie and they don’t taste low-calorie BUT they do indeed have less calories than the standard cupcake.  So, feel free to pass them off as full-fat baked goods…  it’ll be our secret 😉




  • 2 egg whites
  • 1 cup low-fat (2%) milk
  • 1/3 cup unsweetened apple sauce
  • 1 tablespoon vanilla extract
  • 18.25 oz yellow cake box mix
  • ½ cup sweetened coconut flakes (optional)
  • Green food coloring
  • Jelly beans (skinny) OR mini chocolate eggs (not-so-skinny)


  • 8 oz 1/3 less fat cream cheese or Neufchatel cheese
  • ¾ cup powdered sugar
  • 1 tablespoon vanilla extract



1. Preheat oven to 350 degrees Fahrenheit. Line cupcake tins with liners (for approximately 24 cupcakes).

2. Combine cream cheese, powdered sugar, and vanilla extract in a medium bowl. Beat on low speed for about 5 minutes. Store in refrigerator.

3. In a large bowl combine cake mix, egg whites, milk, apple sauce, and vanilla extract. Beat until well-mixed.

4. Pour batter into cupcake tins about ¾ full.  Baked 22-25 minutes (or until you can insert a toothpick into the cupcake and it emerges clean).  Place on a rack and let cool completely (this is really, REALLY important.)

5. Combine shredded coconut with several drops of green food coloring until it reaches desired ‘grass’ color.

6. When cupcakes are FULLY cooled, lightly ice with cream cheese frosting (about ½ tablespoon per cupcake).  Sprinkle 1 teaspoon of green shredded coconut on top of frosted cupcake to form a “grass nest” then top each “nest” with 1-3 eggs.

Note:  For the ultimate “skinny” Easter cupcakes, use jelly beans for your “eggs.”

Because it’s the holiday, I like to cheat (just a little), and use chocolate eggs or M&M peanut eggs.

FYI, with chocolate eggs, these luscious cupcakes are about 200 calories and 7 grams of fat.  Without chocolate eggs, they come in at 155 calories and 4.5 grams of fat.  At that rate, you can even have two!
